When I was a little girl, I loved homemade chocolate chip cookies made with colorful M&Ms. That M&M taste made the chocolate chip cookies even better!
When M&M baking bits came on the market, I was so excited. The small size works even better in cookies, I think, especially a delicious giant chocolate chip cookie recipe that I love making for my family as a special treat.
The tasty bits are also delicious in a new recipe I made Sunday night for a peanut butter bar cookie made without flour.
A recipe on Pinterest caught my eye last week because the sweet treat was topped with my favorite M&M baking bits. From there, I started looking for more recipes. I was intrigued with the idea of a bar cookie that didn’t need flour. The more I read, the more I realized it’s the same idea of the flourless peanut butter cookies so many of us have made.
The basic recipe calls for peanut butter and old-fashioned oats, but there are many variations with amounts and what type of sweetener to use, including honey and coconut sugar. I used both brown sugar and granulated sugar, just as I do in my favorite chocolate chip pie.
I also saw recipes with no butter and recipes that use a stick of butter. I made mine with 2 tablespoons of butter.
I added chocolate chips to the batter and topped it with the M&M bits.
My kitchen smelled so good while these bar cookies baked as the yummy combination of peanut butter and chocolate worked its magic in my oven. And, I admit, I was eating the first bar while it falling to pieces and still hot from the oven. It was so good. The two types of chocolate are not overwhelming but just the right complement to the peanut butter.
Once the peanut butter and chocolate bars had cooled, they were no longer too crumbly, but just right for me!

Flourless Peanut Butter and Chocolate Bars
It only takes a few minute to mix up this delicious treat.
1 cup creamy peanut butter
2 tablespoons softened butter
1/2 cup light brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla
1 cup old-fashioned oats
1/2 semi-sweet chocolate chips
1/4 cup M&M bits
Preheat oven to 350 degrees.
With an electric mixer, combine peanut butter and butter. Add in sugars, eggs, vanilla and chocolate chips until combined. Spoon into square baking pan prepared with baking spray. Sprinkle M&M bits on top.
Bake at 350 degrees for around 25 minutes or until set.
