I know, I know, this is last minute, but I have a very easy Thanksgiving dessert for you.

Easy Pumpkin Cream Pie from Nestle can be prepared in five minutes. Seriously. After that, the pie spends a minimum of four hours in the freezer. Let it thaw in the fridge, and you’re ready to go!

So today, you can stop by the grocery store to pick up the items you have forgotten for your big meal tomorrow and grab the few ingredients you need: a graham cracker crust, a can of pure pumpkin, vanilla pudding mix, evaporated milk, pumpkin pie spice and whipped topping.

When the pie is finished, put it in the freezer, and remember to give it plenty of time to thaw on Thursday.

All you have to do to prepare this pie is mix the pumpkin, pudding mix, milk and spice in a bowl. Fold in the whipped topping and spoon into your prepared pie crust before freezing. Add a layer of whipped topping before serving the pie.

I admit, I could not imagine that this pie would be good. You need to cook pumpkin pie filling, right? I thawed the pie, and it took me two days to get the nerve to eat it. Sigh. I’m not an adventurous eater.

I shouldn’t have waited. This pie is so good! I love the light and creamy filling, and I love the different texture of the graham cracker crust. It’s also very refreshing because the pie is cold. Actually, I might prefer it over the baked version! It’s a tie at least.

The only change I made to this recipe was adding a combination of spices to create my own pumpkin spice.

Hope you enjoy your Thanksgiving pie, turkey and all the trimmings!
